First time using my Coravin Timeless system. Pouring myself a glass of this nice nectar. The nose is great with meaty, umami touches, mushrooms, forest soil, cherry, leather. The palate is very well made and powerfull. Cherry notes dance around with umami touches (soy sauce, meat juice) and black tea. Tannins kick in the rear, creating a slight drying layer that carries on for a long ride with a never-ending finish that shows cherry notes, meat juice and soy sauce, along with a bitter note, blossoming in the end. Great stuff, very well done. Really impressed with the coravin timeless system 👍
