A blend of Cabernet Sauvignon (60%) and Merlot (40%) that shows concentrated berry aromas and flavors. Not jammy or sweet. The supporting notes of violet, cocoa powder, a definite mineral presence along with a hint of espresso bring balance, and the mouth-coating texture and serious structure make this a wine worthy of a higher price tag than it possesses. Surdyk's Staff Selection (Noelle Starr): The non-vintage Brut Reserve, made from indigenous Spanish grapes, undergoes second fermentation in the bottle, is aged for 15 months, and is a fantastic value – even at full price. Aromatic and elegant, there are notes of citrus, Asian pear, hints of flower and a touch of biscuit. The finish is dry and refreshing. Thoughts: start by using a regular wine glas, as a bigger bowl helps bring the aromatics front and center. Pair with anything salty (potato chips), creamy (brie smeared on a fresh baguette), or crunchy (fried chicken is especially good.) Pairs wonderfully with Blue Earth, a delicious brie-style cheese from Mankato, MN
