Ohmine 3 Grain Aiyama — 94/100

Brewery: Ohmine Shuzo (大嶺酒造), Mine, Yamaguchi Prefecture
Classification: Junmai Daiginjo specification
Rice: Aiyama (愛山)
Rice polishing: 50%
ABV: 15%
Bottle: 720 mL

Tasting Notes:

Loved this from the first taste. Rich, expressive and beautifully rounded with pronounced sweetness. One of my immediate favorites of the evening. As dinner progressed, however, the sweetness became increasingly apparent, eventually feeling a little too sweet alongside food.

An excellent sake with a lush, generous character. Better suited as a pre-dinner pour where its richness and sweetness can shine rather than as an accompaniment throughout a meal.
