🍇 100% Chardonnay | Chablis AOC, Burgundy, France
A true gem of a wine of pure, mineral-driven Chardonnay from the iconic Kimmeridgian limestone-clay soils that define the northernmost vineyards of Burgundy, brushing the southern edge of Champagne.
On the nose:
Delicately floral with a streak of flinty minerality and lifted citrus notes. Pure, focused, and elegant.
On the palate:
Absolutely dry and crisp, with vibrant acidity and a medium-bodied mouthfeel. Zesty lemon, chalky tension, and just a whisper of orange peel at the very back end of the palate. Finishes with salinity and length that’s tailor-made for oysters and seafood.
Mouthfeel overall:
Fresh, lively, and laser-focused, this is Chablis at its finest, clean, precise, and impossibly drinkable. The kind of wine that reminds you why Chardonnay rules the white wine world.
Pairing tip:
✨ The ultimate oyster wine, though equally brilliant with sushi, scallops, or a lemon-butter sole.
Can’t have enough of it, and you won’t want to either. Cheers! 🦪🍋🥂 — 7 months ago
Edouard Delaunay – Pinot Noir – 2023
Bourgogne Hautes-Côtes de Nuits AOC – Burgundy, France 🇫🇷
Overview
100% Pinot Noir from higher-altitude sites west of the Côte de Nuits, where cooler conditions preserve freshness and aromatic clarity. A refined, terroir-driven Burgundy showing surprising precision and balance for the appellation.
Aromas & Flavors
Red cherries, cranberry, and raspberry with subtle rose petal, light earth, and a gentle herbal lift. Bright fruit rather than extraction, with a whisper of oak spice on the finish.
Mouthfeel
Light-medium body with lively acidity, silky tannins, and a clean, elegant structure. Refreshing, delicate, and quietly complex, more finesse than power.
Food Pairings
Roast chicken, seared duck breast, mushroom risotto, Comté, charcuterie, or classic French bistro fare.
Verdict
A graceful and well-made Bourgogne with purity, balance, and lift. Understated and charming; perfect for Burgundy fans who enjoy subtlety over opulence.
Did You Know?
Hautes-Côtes de Nuits vineyards sit 100–150m higher than the Côte d’Or, giving wines naturally higher acidity and fresher aromatics, traits increasingly prized in modern Burgundy. — 2 months ago
At 14% alcohol and a medium to medium plus cherry color this is a big #burgundy wine. Gevrey is always a little bit bigger than other villages, but this wine in particular and especially side-by-side with the Savigny-Les-Beaune seems particularly ripe and rich. It’s enjoyable and yet not what I was expecting only 3304 bottles made — 4 months ago
A regional 100% Chard sourced mainly from Côte d’Or (the Côte de Beaune and the Hautes-Côtes de Nuits), and Mâconnais deemed as Edouard’s house signature and sensible price point. Truly “à la mode” Chard that combines freshness of citrus, lemon and orange, with elegance and subtle aromas of mandarine peel. Barely any of cream, but soft on the mid-range palate with a finish of hazelnut and an amazing dry and clean completion of baked pear layers. — 10 months ago
