Popped and poured; enjoyed over the course of a few hours. The “Les Hautes Varennes” NV pours a straw color with a persistent moose. On the nose, the wine is developing with notes of bright tropical and orchard fruit with some lightly toasted brioche, white flowers, lemon curd, and packed with chalk and limestone minerals. On the palate, the wine is dry with high acid. This is an absolutely gorgeous Champagne that gains power and complexity the more time it was open. Drink now with patience. Bottle No. 612/1050.
