Cattier

1er Cru Brut Champagne

Champagne Cattier – Cuvée Brut Premier Cru N/V
Reims, Champagne – France 🇫🇷

Overview
A Premier Cru blend dominated by 40% Pinot Noir, followed by 32% Chardonnay and 28% Meunier, sourced primarily from the villages of Ludes, Chigny-les-Roses, and Rilly-la-Montagne. A house Champagne that embodies Cattier’s signature style, crafted with 41% reserve wines and aged well beyond the minimum 3 years, showcasing both tradition and depth.

Aromas & Flavors
Lively and elegant, the nose opens with ripe plum, white flowers, and acacia, accented by subtle biscuit notes. On the palate, a mouth-coating wave of brioche and beeswax meets bright lime peel, balanced by a refreshing acidity. The finish lingers gracefully with a nutty undertone and a whisper of chalk.

Mouthfeel
Energetic yet refined, with a fine bead and polished mousse. Dosage at 6 g/L keeps it precise, clean, and perfectly balanced between freshness and roundness.

Winemaking Notes
41% reserve wine gives layered complexity and depth, while extended cellar aging elevates the harmony and finesse beyond the standard.

Food Pairing
Perfect with oysters, sashimi, or light seafood starters. Equally delightful alongside soft cheeses or almond-based pastries.

Verdict
A quintessential Cattier expression — fruit-driven, floral, and elegantly textured. Hard to stop at just one glass! Cheers 🥂

Cellar Reserve Old Stock Ale 2016

Jumping spider eye bubbles mass in a parabola foam while smaller bubble sheens fill the bursting absences, until the whole becomes an espresso foam, and equally oiled. Unction lacings lean Hebraic but ultimately are the dream fonts writ by the hand of G-d. Mene Mene Tekel Parsin they seem to say before fluttering away as constellations on a starling’s back. Fair warning as this is a heavy purse to carry. Six years in and taking stock. Figs, dates, treacle, raisins, carob, caramel, vanilla bean, sweet potato casserole, bacon fat, mincemeat. Rich on the palate with milk chocolate, molasses, Turkish coffee, gingerbread, candied date, and espresso-tobacco finish. Gloriously integrated and complex complexions.

Brut Réserve Champagne Blend

It’s pretty rare that a House’s entry level bottle can challenge other House’s more prestigious offerings. A pale gold hue with truly a plethora of lively bubbles. Impressive perlage. The nose is powerful and engaging. Strong notes of honey and green apples with butterscotch and lemon peels. A smorgasbord of delightful citrus aromas and brioche bread really elevate this.

Almost equal parts of the three Champenois grapes with a dosage of 7 g/l. Disgorged on 7/20 and using 35% of reserve wines, there is a depth to the champagne that many others simply can not compare with. It starts off a bit angular but soon develops nicely in the glass. The acidity is bright, the body full, and the mouthfeel rich. Biodynamic without certification.

The palate is the definition of precise with crisp fruit and beautiful chalky minerality. Pears, grapefruits, and light red cherries shine. Toasted bread, nuts, and more autolytic touches. Marzipan and a little oak just for kicks. This is outstanding wine and can stand proudly next to some of the bigger boys out there.

Finally getting around to posting wines from my annual Napa trip from two weeks ago. Always goes by quick! Lots of fun new stops this year.

Third year in a row to hang out with
@jesus g as he pours some amazing Schramsberg and JDavies wines for us. One of the best hosts in the entire valley! If you find yourself in Napa, don’t miss out on doing a tasting with him!

This is always my favorite sparkler for enjoyment now. My notes on the ‘08 and ‘09 below won’t look much different than my note on this ‘10. Maybe a touch more gently oxidative with classical nuttiness, ripe strawberries and cream on the nose with toasted cranberry scone and a rich and powerful profile on the palate. Always so consistent.

Moussé Fils

L'or D'Eugene Brut Blanc de Noirs

Again it’s a champagne from Cédric Moussé, one of the Masters of Meunier. He’s almost single-handedly put Cuisles on the wine map. The L’Or D’Eugéne is a perfect introduction to his style.

Medium gold with fast paced perlage and an attractive bouquet. Black cherries and pretty flowers combine with chalk and herbs. In the mouth, it’s racy and vivacious. Sexy and a bit thrilling with zippy acidity. 80/20 Pinot Meunier/Pinot Noir from a perpetual reserve with an Extra Brut dosage of 2 g/l.

I’ve always wanted to drink this over a few days. To really let it breathe and mature in the glass. To really let it set and enjoy it over time. But I can’t. It’s just too damn good.

Larmandier-Bernier

Latitude Extra Brut Blanc de Blancs Champagne

Light straw with just the faintest hint of green flecks. Impressive perlage with a plethora of tiny, effusive bubbles. A remarkable and delicate bouquet upon opening. Lovely, lovely expressions of pears and honey, lemons with a twist of lime, apples and dried peaches. Pretty flowers and toasty brioche bread.

When it comes to Larmandier-Bernier elegance is always a major factor. Consistently plush and a notch above. Pure Chardonnay aged on lees for two years with 40% of the blend coming from a perpetual reserve dating back to 2004. Extra Brut with a dosage of 4 g/l. This bottle is a more recent disgorgement that will benefit from more time even though it’s non vintage.

Despite this being their entry level bottle the purity is almost shockingly excellent. Sharp acidity and wonderful tension. That delight and immaculacy transfers to the tongue with chalk and salinity. Lemon curd, mushrooms, and roasted nuts. Medium long finish that you wish lasted for just a few heartbeats more. Beautiful, as always.

Generations Reserve Peter Mondavi Family Red Bordeaux Blend 2014

Wow wow wow and I would say O-M-G as well. Top 3 wines of all time. Definitely does not drink Like a Bordeaux. More like a Cabernet.

And thank you Ted who gave us this bottle and recommended to decant it and throw in the fridge 1/2 hour.

You will not be disappointed even at a $65 price tag. Smoky with definite oak and black currents, it’s simply remarkable.... and even though it’s “alcoholy” from the nose to the finish, it is so complex and dry that it compliments a cab lovers palate!

Veuve Clicquot Ponsardin

Demi-Sec Champagne Blend

Veuve Clicquot Demi-Sec Champagne. My first time trying Demi-Sec after getting a promotion at work! My first impression is kind of what I expected: a slightly sweeter champagne. It still has a slight dry after taste, but generally does have a sweeter taste to it. Aromas of ripe apples. Tastes a bit more of Pinot Noir than Chardonnay which makes sense as the website lists it as a Structure of 40-45% Pinot Noir, Fruitiness of 30-35* Meunier, Freshness of Chardonnay 20-25%, Reserve Wines of Blend 30-45% and Dosage of Demi-sec 45 G/L. It also says the serving temperature should be 8-10 degrees celsius, and has an aging potential of up to 3 years.
In short, for my taste buds it’s the perfect sweetness of not too sweet, but sweet enough to really enjoy it (even for non-wine drinkers). Might have to grab another bottle of this for Thanksgiving. Will absolutely be purchasing more Demi-sec in the future.

Reserve Napa Valley Cabernet Sauvignon 1987

Deeper , less garnet , narrower rim . Quite meaty , coffee and dark fruit , blackcurrant nose . On the palate more soy , coffee , cassis and black fruits , more fresh and vibrant than the G de L , higher quite raspy tannin too . Refreshing acidity , still quite young , needs time in decanter . Nice balanced finish , showing more fresh cassis and dark cherry . This could go further , and I feel there may well be better bottles out there that maybe more fruit driven .. 91? — 3 years ago

Paul Bara

Réserve Brut Grand Cru Champagne Blend

Light shimmering gold in the glass with a plethora of small, profuse bubbles. Primarily Pinot Noir and that’s clearly evident on the nose. Peaches and plums with a strong infusion of dried strawberries and red cherries. Apples aplenty with cinnamon rolls and toasted nuts.

One of the more esteemed growers, Paul Bara produces nothing but exemplary champagnes including this entry level bottle. Unmistakably Bouzy, their wines always represent the terroir and terrain so very clearly. 80/20 PN/CH with a dosage of 7 g/l and disgorged in September of 2020. The kicker here is the 50% of reserve wines they use for the final blend. Just astonishing and makes a huge difference.

The acidity here is tight with a bit of zip but mellows out over time given air. Nice harmony and balance, as usual. Apples and cherries dominant on the tongue. Creaminess abounds with medium spice and hazelnut. Amongst entry level grower champagnes, there just aren’t many better than this. Always an instant buy.

Canard-Duchêne

Charles VII Grande Cuvée des Lys Brut Blanc de Blancs Champagne

A pale gold hue leads to some nice effervescence and tons of small bubbles initially. A fine mousse and highly aromatic on the nose with an abundance of wet stone minerality and fresh pears. The fruit is ripe and expressive with citrus aromas being dominant with the more autolytic notes serving as backup. After some time and air, that nice yeast and floral aspects come to the fore in the form of delicate little white flowers.

100% Chardonnay with 7 g/l that only adds a little softness to the acidity of the champagne. With 30% of the blend coming from reserve wines there is a distinct elegance and refinement happening here. The fruit comes from Grand and Premier Crus from Avize and Cramant.

This is most certainly a pop and pour champagne, it’s ready to go. A silky mouthfeel with crisp acidity which leads to crisp fruit on the palate. Baked apple pie, brioche buns, and mandarin oranges shine. Decidedly lush and fun. Fruity, elegant, and versatile.

When pouring next to the Reserve, this always shows a much more brighter and tightly coiled profile (as expected with BdB). I’ve found that I enjoy the Reserve younger and the JSchram older (as it starts to channel similar Reserve tasting notes with more age). Lemon confit, buttered fresh biscuit, sea spray and grilled aromatics. The acid is almost racy, yet it still is amazingly commanding in how it evolves with complexity.
