Not bad at all, with slight spice notes, which I like. It will not be for everyone, but definitely with buying. — 4 years ago

Vignerons Catalans

Red Domus Roussillon Villages Grenache Shiraz 2015

Pretty nondescript, sort of muted Syrah notes of game meats and black pepper. 2015 is fine but doesn’t shine in the southern Rhône valley. — 6 years ago

Terra Alta Domus Pensi 2013

Beautiful evening with the loved ones and this guy out of Spain. Interesting blend of grenache merlot syrah and carignan.. heavy cedar and leather to the nose. Plum blueberry cedar leathers and dust to the palate. A very bit hot ... HOT!!! With almost 15 percent alcohol content. Med plus finish but hot. — 8 years ago

Paul, Delectable is where I keep all my notes. It's always with me. So, when I am asked specifically about a wine and can't specifically remember it, I can look back on my notes. Also, when I have the wine again years down the road, I can see how it evolves. That's the part I really enjoy. What can I say, becoming a Sommelier changed my life from simply enjoying a wine...only really thinking about whether I thought s wine was a bad, good or excellent wine. To now, more or less picking them apart. It simply evolves to another level when you taste as much as I have with Master Sommeliers.

Seriously, you need to stop taking me seriously. I'm just a fool who drinks wine.,

It's social written media. There are a lot of people reading and drawing their own set of conclusions. While I know your not that serious, I address comments for the masses. 🤓

Domus Aurea

Cabernet Sauvignon 2018

I’m not into Chili wines due to high cassis flavours. In this one it was perfectly integrated bringing this wine to a higher level. Loved it big time! — 2 years ago

Cassis, black fruits, violets and red liquorice nose. Well structured on the palate with bright, floral acidity, and soft, subtle tannins. Short, pleasant finish that pairs well with a bit of char, and unique BBQ flavours. — 8 years ago

Viña Quebrada de Macul

Alba de Domus Cabernet Sauvignon 2019

Alba de Domus – Cabernet Sauvignon 2019
Upper Maipo Valley, Chile 🇨🇱

Overview
A bold and powerful Cabernet Sauvignon (95–100%, often with a tiny fraction of Cabernet Franc depending on the vintage) from the famed Domus Aurea estate in the Upper Maipo Valley. Known for its mountain terroir, this wine shows the classic strength and rustic elegance of Chile’s best Cabernets.

Aromas & Flavors
Deep, complex aromatics of blackberries, black cherries, cassis, and dried figs, laced with espresso, dark chocolate, cedar, and tobacco leaf. A subtle earthy and mineral undertone speaks to its Andean foothill origins.

Mouthfeel
Full-bodied and texturized, with high intensity and firm structure. Tannins are bold yet polished, while the 15.4% ABV provides warmth and weight without overwhelming balance. The finish is long, layered, and espresso-driven, lingering with dark fruits and spice.

Winemaking Notes
Unfiltered and aged in French oak, this Cabernet is designed for longevity. The 2019 vintage already shows power and depth, but its construction suggests it will evolve beautifully over the next 8–12 years.

Food Pairing
Ideal with robust dishes: grilled ribeye, lamb shank, venison, or earthy stews. Also pairs wonderfully with aged Manchego or Parmigiano-Reggiano.

Verdict
Hot, intense, and layered — a true statement Cabernet from the Maipo Valley. Already climbing its prime, yet with enough structure to age gracefully. For lovers of powerhouse reds with espresso and dark chocolate complexity.

Red Domus Roussillon Villages Syrah Grenache Noir 2015

Blackberries and blueberries, with some raspberries initially, which fade some after opening. Also salt, with hints of green bell peppers, caramel, and pork fat. Good acidity to balance, low-ish tannins, and very approachable. Wine Spectator said 90 points, and I have to agree. — 7 years ago
