Aus Pét Nat Cava Pansa Blanca

A Pet Nat with lots of the things I love about Champagne. Things like white flowers and chamomile and lemon zested cream, raw bagel dough, and graham cracker.

Good depth and length down to the last yeasty glass.

Acid driven and very edgy. One dimensional on a table with many nuances. Not that’s it’s bad at all. This is very drinkable and refreshing and this should be no problem to let sit around. I actually would imagine the depth would really expand after a couple years of this wine sitting around but it’s just not really there at this particular moment.
