Ok this is excellent oxidative white wine, and has all the qualities I love in great fino sherry. But then again I wonder when drinking why not just drink good fino?

Fino like in character but completely fresh. So salty! Great to drink with fried oysters, fried sardines, fried anything.

I see what they were trying to do, but the ethyl acetate just dominated the aroma and nose. Shame as it did have some interesting character.

So. Damn. Good. Layers of complexity, bright food-friendly acidity. Baked apple, nutty, and citric tang. Truly unique
