
The waiter actually tried to talk me out of this one, I think he wanted me to go for a more “known” producer. But I know what I want, and I don’t tend to go for big names just because. And I am not disappointed with my choice! Aromas and flavors of black pepper, sour cherry, current, cranberry, and smoke. A floral note of hibiscus lingering in the background. Acidity is medium + and tannins are smooth and elegant. Paired with semi-cured Manchego cheese, quince paste, and oxtail stew.
