Not very giving on the first night. Toasted sesame seeds mostly, pretty reductive. Left it open in the fridge overnight and it was wonderful when I came back to it. Still reductive, but pleasantly so. Crystalline aromatics. Citrus, underripe tree fruit, mineral and energetic. Can't wait to see how it shapes up in a few years.

Feast of the Seven Fishes companion. Muted at first, but the brightness and acidity showed after opening for about an hour. Another great blend from @Dan Petroski.

Lots of shaving cream sulphur knocked down the nose. Opened to nice herbal nuances, but still quite shut down after decanting. I'll revisit tomorrow.
