Spicy, crunchy red fruit on the nose. All cranberry, raspberry, with some smoke and minerality with some hints of natural wine musk. Color is super light and pale, cranberry like red, with a light body and a beautiful, fruit punch of a palate. Flavor lingers for a loooong time, fresh with nicely integrated minerality, a little tartness in there, but dry, with all that juicy fruit, with that same kinda volcanic, smoky element skulking in the background. Great chilled, easy drinking juice that punches way over its weight class! — 7 months ago
Some buzz around this producer so approached with some anticipation. Restrained white flowers & confectionery Turkish delights on nose; mouthfeel quite smooth & elegant, w a stronger Riesling & Chenin Blanc presence, more of those white flowers & some RS. I’ve aged some other producers Timorasso w excellent results so see no reason this can’t do same, but this is drinking well young too. — a year ago
Love it! Juicy AF. Minerally. Good with spicy shakshouka. I'd keep a bottle of this on hand all the time. — 3 years ago
A few things first.
This Jasper Hill Farms Harbison is the creamiest, gooey delight out there, once you let it warm up. I take it out a 1/2 hour before serving. It is wrapped in spruce cambium, which is the inner bark layer of a spruce tree. Gives it a interesting characteristic. Always a great pair with WB and or Blanc de Blanc Champagne.
PYCM is simply one of the better & consistent white burgundy producers. They’re close to town and not far from Olivier Leflaive. Right around the corner basically.
2020-23 has been a good run in white burgundy. Maybe, 24 too. Not sure yet. I haven’t had a big enough sample size yet. The ones I have had, very good.
The nose reveals; Meyer lemon, green apple, lime zest, tropical melons, white stone fruits, honeycomb, frothy cream, light caramel, some herbaceous notes, paraffin, sea fossils, saline, grey volcanics, dry limestone, chalky powder, yellow & white lilies that remind me of funeral arrangements.
The palate is round to thick, vicious & waxy. The flavors mirror the nose. Meyer lemon, green apple, lime zest, tropical melons, white stone fruits, honeycomb, frothy cream, butterscotch, caramel, some herbaceous notes, white spice that palate burro’s w/ pleasant heat, paraffin, sea fossils, saline, grey volcanic fine bits, dry limestone, chalky powder, with tiny bits, yellow & white lilies that remind me of funeral arrangements, rainfall acidity with a round, lush, well balanced finish w/ good length/tension and lasts two-minutes long setting on earth-volcanics & spice. — 18 days ago

— 8 months ago

Gold hue. Aromas and flavors of apple, apricot, bell pepper, lemon, and petrol, with a hint of grass and creamy notes. Medium body with medium-plus acidity. Silky and rounded mouthfeel. Complex bouquet. Elegant and balanced, with a lasting finish. — 2 years ago

Popped and poured; enjoyed over the course of a few hours. The 2017 Pajé pours a garnet color with a transparent core; medium+ viscosity with no staining of the tears. On the nose, the wine is developing with notes of Morello cherry, cranberry, freeze dried strawberry, ground cumin, tar, talcum powder, old cedar chest, some varnish and dry gravelly earth. On the palate, the wine is bone dry with high tannin and medium+ acid. Confirming the notes from the nose. The finish is medium and loaded with savory minerals. Still very much in its youth, this was a lovely solar expression of Pajé. Drink now with patience through 2047. Bottle No. 2045/6666
