Opened this at midnight last night but was too tired to take notes. Stoppered it for today. It’s really good. Crisp, fragrant, fine bead, great acids. Minerally, a little toasty yeast note, and crisp straw-apple fruit. Hands down best Cremant de Bourgogne I’ve ever had. Happy New Year!
