Kyoto Whisky

KURO-OBI (Nishijin-ori)

Light. Guessed 40% ABV so reads lighter than it is. Finish gets better with air and will try it again in a bit to see if the air helps. > Kyoto Miyako Distillery

Ancient Pillars Junmai Daiginjo

Baller, celebration Sake. Rich & concentrated Genshu. Dried shrimp paired with chocolate at its mind-bending best. You don't know the rules. Come drink some at The Peterboro Detroit and rosy up them cheeks on the good stuff. — 10 years ago

Black Label Junma Daiginjo

This is Nanbu Bijin Black Label. They say it has “aroma of fresh and juicy orange, melon, pear, and zesty pineapple. The fruitiness follows through to the palate with the refreshing flavor of apples and the umami-rich sweetness of rice come together in a longlasting, beautiful, and clean finish. An elegant sake for special celebrations as well as everyday meals. Served in the first-class cabin of Japan Airlines.” I don’t get the aromas right now but will let the chill come off and see. There is no bottling date so I can’t tell if that’s impactful. It does have what I think is classic Yamada rice flavors although I better try some alternatives just to make sure :). Some say semi-dry, others say semi-sweet. I would go with semi-sweet. Need to look up the SMV but I’m going with -3 — 2 years ago

Little bit off on the SMV so need to calibrate better and take into account alcohol and acidity better. Rice: Yamadanishiki
Polishing Ratio: 35%
SMV: -2
Acidity: 1.4
Alc: 16%

TOYO BIJIN Hakutzuru-nishiki Junmai Ginjo

Okarakuchi. Floral, fruity on the first palate finished with sharp clean finish. Not my favorite but it does its job. Sometimes Karakuchi sake leaves large amount of umami flavor in the end but this sake leaves more clean finish. — 6 years ago

Just delicious. Full bodied with wonderful texture, but quite balanced. A smidge on the less dry side overall. Hard to argue with as a pairing for tonkatsu. — 2 years ago
