Cortijo Los Aguilares

Ronda Sierras de Málaga Pinot Noir 2021

This is an outstanding Pinot Noir from Spain. Clearly had some time in French barrels, medium red color, pretty light appearance. Red Cherry, medium/medium +body, super subtle tannins, soft and complex: excellent! — 2 months ago

9.4

I asked the Somm to recommend a wine from Andalusia to pair with the region’s cuisines. Without hesitation, he picked out this bottle from a winery based in Ronda, a town I visited more than 10 years ago and have vivid memories of.
This is the flagship bottling of the winery with 100% Petit Verdot aged 12 months in clay amphorae.
It’s rich and savory just like to cuisine, and also has the lively acidity and aromatic intensity to counter those richness. What a great pairing!

Cortijo La Fuente Colección No. 1 Crianza Biologica Pedro Ximénez

This is the. Bodegas Cortijo La Fuente.
A Fino from Mollina, heart of Andalusia.
Made from Pedro Ximinez, in solera for 5 years. Vineyard farmed since 19th C.
Limestone and sand.
You can sense the “ heavinesses “ of the Pedro Ximiniez on the nose, but it’s an almond fest, dry, w a touch of barrel and raisin to finish. Brandy like.
Not heavy on the palate.
Another discovery.
