Signature Donn Chappellet Napa Valley Cabernet Sauvignon 1984

This bottle of the 1984 “Signature” was opened and Audouzed about an hour prior to service. It was then enjoyed over the course of three hours. The wine pours a deep garnet color with an opaque core; medium viscosity with moderate staining of the tears. On the nose, the wine is developing and was initially tightly wound but eventually opened up to reveal sensational notes of black currants, blackberries, tobacco, mixed herbs, inorganic earth and fine baking spices. In the palate, the wine is dry with medium+ tannin (still!) and medium+ acid. Confirming the notes from the nose. The finish is long. A sensational, classic, evergreen Napa Cabernet Sauvignon made by the legend herself, the one and only Cathy Corison. Drink now with some air or short decant. However, well stored examples will drink well through 2044. — 12 days ago

Evergreen Vineyard Sauvignon Blanc 2021

Light straw color with aromas of citrus and tropical fruit adding a touch of floral spice notes. On the palate flavors of pineapple, peach and grapefruit with citrus and honeysuckle notes, generous acidity, great mouthfeel with long finish ending with a salty mineral spice character. Pop and pour. I want to follow, but this is disappearing very quickly. On the nose, the word purity comes to mind; all the aromas are so well-delineated and yet simultaneously well-blended. Lime oil, crushed pine nuts, evergreen sap, loads of crushed stone, peach. On the palate: fantastic acidity, absolutely amazing density, wet stone, sappy lime, soft reduction. The intensity is really amazing, and a fantastically long, slightly spicy finish. — 4 years ago

Gran Reserva Rioja Tempranillo Blend 2012

Opened up after a few hour decant, but still needed a marbled steak for balance. Deep dark blackberry pie, tobacco, evergreen needles, and uplifted cranberry. Well balanced with great purity of fruit and persistent length. American oak flavors surround both red and black forest berries. Still very youthful... definitely decant or cellar. — 5 years ago

Popped and poured; enjoyed over the course of an hour. The 1981 pours an amber color with medium+ viscosity. On the nose, the wine is developing (still!) with notes of ripe apricots, orange peel, honeysuckle, marmalade, candied nuts and crushed rock. On the palate, the wine is sweet with medium+ acid. Confirming the notes from the nose. The finish is long. This bottle of the 1981 seems evergreen considering the way it showed today. Drink now through 2081?? — a month ago

This is the Evergreen Lek single vineyard dry Riesling. Very “Trimbachian” in style. Nose shows subtle crushed slate, a bit of petrol-like minerality, dried and fresh green apple slices. Crisp and bone dry in the mouth, the texture is soft and the finish is long. Medium bodied. Very classical. — 4 years ago

@Daniel Bloom - I hadn’t noticed that, at some point, Delectable cut off some words of the bio. I think it was “sick of wines 15% or more.” If I see 15 or higher on the label, it’s almost always a hard no from me. Dogmatic, maybe. But it is what it is.

Côte de Léchet Chablis 1er Cru Chardonnay 2006

Popped and poured just below my cellar temp (which is currently at 59°F); enjoyed over the course of two days. Consistent throughout. The 2006 pours a reflective, straw color with silvery rim. Medium viscosity with no signs of particles or gas. On the nose, the wine is developing. Notes of lemons, limes, honey, cashews and oyster shell. On the palate, the wine is dry with medium++ acid. Confirming the notes from the nose. The finish is long and super chalky. This is absolutely killer Chablis that almost seems evergreen. Drink now through 2031.

Les Lys Chablis 1er Cru Chardonnay 2007

2007 Lime, lime pith and lemon peel hold strong despite age. Lemon madeleines, orange oil, tangerine pith, lemongrass, evergreen. Orange peel, lemon oil and lemongrass forefront, while lime neutralizes to background color green olive swims in the lime, chamomile, kefir lime, grape leaf, crystalline salinity. Bright and ripe after 15 years!
