My two-day Pork Chop marinade. I have found the Long Shadows Poet Leap to be the perfect pairing.
Here is the recipe. Try it sometime.
4-6 thick cut bone-in pork chops
- 1 cup hoisin sauce
- 1 1/2 tablespoons of sugar
- 1 1/2 tablespoons of Tamari soy sauce
- 1 1/2 tablespoons sherry vinegar
- 1 1/2 tablespoons of rice vinegar
- 2 scallions chopped
- 1 teaspoon Tabasco Sauce
- 1 1/2 teaspoons of Lee Kim Kee brand chili sauce
-1 1/2 teaspoons of ginger finely chopped (I triple this)
- 1 1/2 teaspoons of garlic finely chopped (again.
I double this)
- 3/4 cup of cilantro finely chopped (no stems)
- 1 tablespoon of sesame oil

Pinot Noir lovers, Adam and Dianna Lee, founded Siduri in 1994, producing only four and a half barrels of Pinot Noir that first vintage. Now they make over 10,000 cases of Pinot Noir. A big wine with full fruit aromas adding the right touch of cedar spice. Palate has black and red berry flavors, adding cacao and sweet cinnamon, soft with a citrus kick. Last night we finished a few low bottles, including this Elmer. When I opened this in April, it wasn't awesome, but of course by the last few drams it was firing on all cylinders. Sweet cinnamon and pleasant oaky tannins.

Adam Lee at his SLH best. Lush and complex. Dark cherry, cranberry, cinnamon, clove, a hint of stem and a solid oak backbone. Medium bodied, high alcohol, medium minus tannins, high acid, and a long finish. This is a big, bold pinot, (Burgundian on steroids?) without feeling forced. — 10 months ago
