100 % Narello Mascalese with just a few hours of skin contact.
Pale salmon in colour. Wild red berries and lemon peel on the nose.
Juicy and mouth watering with medium body.
Bright strawberries, wild flowers and wet stone. Crisp minerality with a savoury saline finish.
My Chef at work was cleaning whole Hamachi tuna and gave me collars and tuna belly.
We salted them and put them on the BBQ.
