Overview
A very unusual and refreshing interpretation of Sangiovese vinified as a white wine (vinificato in bianco). Instead of extracting color and tannins from the grape skins, the juice is separated quickly, allowing Sangiovese to express itself through freshness, delicate aromatics, and vibrant acidity rather than its traditional red-fruited structure. This Tuscan curiosity turned out to be surprisingly enjoyable and far more compelling than expected.

Aromas & Flavors
Delicate notes of pear, citrus blossom, lemon zest, white flowers, and light Mediterranean herbs emerge softly from the glass. Subtle mineral tones and crisp orchard fruit keep the wine lifted and refreshing without becoming overly simple.

Mouthfeel
Light-bodied, clean, and very well-balanced. The palate is crisp and refreshing with gentle texture and bright acidity, though intentionally not built around complexity or heavy structure. Easygoing, elegant, and dangerously drinkable.

Food Pairings
Excellent with seafood pasta, grilled shrimp, light antipasti, sushi, chicken piccata, fresh cheeses, or simple Mediterranean appetizers.

Verdict
One of those wines that quietly surprises you. Not deeply textural or highly complex, but genuinely refreshing, distinctive, and highly enjoyable. A great example of how Italian producers continue finding creative ways to reinterpret indigenous grapes beyond traditional expectations.

“Vinificato in Bianco” means a red grape is made like a white wine by minimizing skin contact during fermentation. Since most grape juice is naturally clear, even dark-skinned grapes like Sangiovese can produce white wine when handled this way.
