2015 - Vintage - 2015 Vintage -I would put this at sweet or very sweet great acidity to balance the sweetness , aromas of wet wool, honey , honey dew melon. Nice wine perfect if your looking for dessert reminds me of quarts de chaume - this could age for many more years — a year ago

Sweet honey dew melon, orange blossom, kumquat, lychee and a creaminess that lasts forever.
There is an elegance to this Nihon shu.
We had fresh caught local Spot Prawns sashimi and local diver caught octopus grilled.

Smells of scone spices.
Medium bodied with a bright fruits leads me to believe this is strong on the Grenache - cherry preserves, pepper, tobacco, chop stick tannins (bamboo) and grape jolly rancher acidity.
May need another couple years to fully meld.

Subtle and powerful in the same taste. Beautiful aromas of red fruit, spice and mocha. Powerful brambly tastes of blackberries, raspberries and dew berries (wild berries here in Houston) . Reminds me of wild berry cobbler with a hint of pie crust sneaking out of the complexity of this wine. Tannins are elegant and sleek. The acidity is nicely woven into the structure of this beauty. So Williams Selyem Pinots should be treated is the same fashion as good burgundy, with age. It will always be somewhat sweeter than red burgundy but nonetheless very good.
This shows w/ an array of mid berry fruits accompanied by some darker fruits. Strawberries, cherries, pomegranate, cranberries, raspberries, hint of rhubarb, blackberries and haunting blueberries. Mid berry cola, red licorice, fruit tea, eucalyptus, pine tar notes, pine tree bark, dark, rich soils/earth, dry herbs, mid, dark spice, dry crushed rocks, dry limestone powder, black pepper notes, dry river stone, dry fall leaves, bright florals that are; red, blue, purple with a mix of red & pink roses, late spring waterfall acidity with extreme balance, tension, structure with elegance & smart polish for days and long sets on tree bark/sap & spice.

This is beautiful. The nose lasts long and smells thick with rose, dry dirt, potpourri, dark ripe fruit. There’s still pretty grippy tannin structure and acidity that makes your mouth salivate and desire more. The rose really comes out on the palate, maybe a touch of lavender, moist funky dirt, ripe mulled blackberries. The finish is long. The ripeness of the blackberry really hits right at the finish and hangs on. Give this a bit of a decant, at least 30 minutes. I want more, but have none. — 4 years ago

Clear with hint of yellow. Light acidity on the nose. Very light, hint of honey dew or pear but very subtle, crisp ending with mild acidity. Very refreshing. A perfect dry reisling. Binny's regular $20 end of bin for $10. Would pay full price. — 6 years ago

The wine possesses a profound, healing, oriental herbal bouquet. It's not like fresh mint or basil; it's more like opening a traditional apothecary cabinet filled with premium Chinese Angelica Root (Dāngguī), Astragalus (Huángqí), and dried lily bulbs, or walking through a damp forest after the rain, with scents of ginseng, licorice root, and dried citrus peel warming the air, all interwoven with the luxurious undertones of black truffle and moist earth. It's an aroma that evokes serenity, warmth, and nourishment.
Upon first opening, it presented an aroma of traditional Chinese herbs. After breathing in the glass for half an hour, the wine truly began to unfold, releasing intense notes of red fruits, woody fragrances, and those distinctive herbal nuances. The body is a remarkable fusion of elegance and power. Despite its age, the 1988 vintage retains a finely structured and layered profile, with a clean palate and velvety, silky-smooth tannins. The finish is exceptionally long, evoking the delicate scent of morning dew on bamboo leaves. Overall, it’s an utterly captivating wine that leaves one truly enchanted.

Light- not too sweet. Our charming 2023 Riesling is a brilliant pale straw in hue with a tiny hint of chartreuse. By far our driest Riesling yet with only about 1% residual sugar, the ABV is a late-afternoon friendly 11.4%.
Engaging floral aromas of honeysuckle, white rose petal, gardenia, and citrus blossom are in lovely harmony with nectarine, honey dew melon, and kiwi. The palate is well-balanced, crisp and clean, and finishes with a refreshing, brisk acidity. There is a subtle touch of minerality that should develop nicely with a year or so of bottle age. — 2 years ago

This was fantastic. It was delicate and interesting with a nose of berry, strawberry and raspberry. It also had flavors of strawberry and a tiny bit of spice. On a hot day this was a great red. — 6 years ago
Vibrant. Pear, green apple and violets. It tastes and smells like rich dew on an early Spring morning glistering in the sun. A new dawning! Like it will be for my brother Wim. Couldn’t be a better wine to celebrate him coming out of coma today after a terrible fall fracturing his skull. He responded well to testing the basic functions. Breathing on his own again.
