Collin says raspberry, I say it’s red. Doesn’t dry out the mouth with tannis like a lot of CFs, probably due to age and lack of decantation. Great everyday red. — 2 years ago
Absolutely gorgeous and unique. For a 23yo wine the complexity on the nose and palate is still bumpin, and the tannins are silky and smooth, with a little grab here and there just to let you know it’s past. Nose of rich dark berries, old driftwood (from Collin) with a medium body that’s fruit forward, somewhat smoky, and beautifully balanced with hints of dried herbs, and sage. Such a wonderfully vinous and woodsy wine. I really enjoyed it. It was complex with red fruit, strawberries that were a touch underripe, some allspice, and the wood just brings the nose all together. The body was well structured and the finish long. This reminded me of Ulysse Collin. — 6 years ago
Inaugural release from Pauline, Raphaël Bérèche’s wife. Made of old-vine Pinot Noir from her own family’s estate. 48 months on lees and with a dosage of 3.5 g/l. Scarce as hen’s teeth with a mere 1996 bottles produced. Delicious, though I did find it a tad simple (and primary). Heaps of green apples and citrus fruits. Tasted almost like Zapple for those in the know. Air did coax out the more mineralic elements, along with hints of nuttiness and toast. Good energy. My last bottle. When it comes to big house producers, Charles Heidsieck may very well be my favorite. This 2006 rosé has 8-10% still red wine in it, and spent about seven years before disgorgement.
This was opened alongside a Ulysse Collin Les Maillons (which is one of my favorite grower champagnes, yet I’m out at their increasing price point). The inherit sweetness here is so divine. More balanced than the bottle I opened 2-3yrs ago, yet more compact than the 2007 I opened a few months ago. Required about an hour to come in to its own. Salmon-colored in the glass with an intoxicating nose…strawberry shortbread, toasted pastries (cranberry scone), faint limestone. Typical CHeidsieck palate with richness but great focus…turns a bit darker red fruit driven but already possesses a mature-profile with nougat and spiced red fruits at the finish. Definitely some flair of orange zest too. Benchmark vintage rosé! — 4 years ago

One of the best Champagne’s I’ve had this year, 2014 disgorgement 48mois Les Roises is impeccable, with captivatingly complex aromatics and both richness and purity. It’s deep and enveloping with such textual detail, satiny and vinous with superb fruit definition, old vine concentration and a chalky mineral core. This has always been my favorite cuvée from Olivier Collin—more demonstrative than Les Enfers with that sunny southern exposure always shining through. If Montrachet could sparkle here you have it. — a year ago

A lovely showing. Glad we opened this at this stage, since it seems at peak. Lovely color, mousse and density. Rich lemon, honey. On the palate, fanatastic acidity, good density. This was excellent, but just not as complex as the Collin. Yum. — 5 years ago
