IIRC, this is made by Ployez-Jacquemart. The wine pours a light straw color with a persistent mousse. On the nose, mostly orchard fruits, apple, some lemon curd, brioche and minerals. So so dense. So tight. So coiled. So elegant. So concentrated. Structured. Checking in tomorrow. Nose is so floral, a day later. Very mineral and so expressive. Palate is enormously complex, chewy and dense. My goodness the density of this wine is just insane. It’s barely budged overnight. Fleshier, yes but also there still is more to come.
