Paolo Bea dinner at Semo. All wines were prepared by opening and slow-ox, prior to service. Abbreviated notes due to the setting. The 2011 pours a deep, hazy garnet with wild notes of Chinato, bruised fruit and leather. Profoundly sensual and also a smash with the quail. Drink now through 2031-ish. A chill in the air, a tangine of quail with preserved lemon & green olives, and a nice crackling fire, paired with the brightness and texture the 2018 Roussanne would be most proper. Or, something like that:) — 5 years ago
