Bright, effervescent pet nat ~ crisp notes of apple, pear and slightly almond with a zesty lemon finish — 4 months ago
Medium lemon , hints of gold , quite a healthy colour with fine pretty persistent bubbles still . This quite intense with candied lemon peel , brioche , oyster shells , touch of porcini . On the palate this is intense ,with good volume and vibrant acidity. Buttered brioche , oyster shell , candied orange and lemon peel . Really quite lovely and intense , long and toasted brioche , chalky finish . This is at peak now , but no rush from here over the next 5 perhaps 10 years . — 9 months ago
Quite light lemon yellow , very persistent , fine bubbles . Quite taut and strict on the nose , chalk dust , white flowers , honey suckle and elderflower , lemon peel , touch oyster shell and a touch of fresh baked bread . On the palate really good volume and density , lively acidity . Lots of citrus with good mineral , oyster shell notes . Long and mineral , saline, tinged finish , hint of toasty brioche on the end . This is really quite young and shows tighter and more mineral than the first bottle we had . Would leave this a few years and will have a long life , better in 10 -15 years and last well a further 10 or so . Great potential — 2 years ago
Feeling Lucky?
Despite the premox issues plaguing these early 2000s Fèvres, I held on to my 3 bottles for proper aging. My bottles were going to hit their prime drinking window or die trying
DAY1
Served with the Vinloq System
Golden color. No browning
👃Honeyed pineapple, citrus, jasmine tea
👅Where r the oyster shells and minerality? Oily texture. Nice. 9.1 pts
Stored the bottle in my fridge with Vinloq Preservation
DAY8
👃Aromas change with each sniff
👅Buttery, spicy citrus. Slate minerality. Feels <17 yrs old. Complex. Finishes dry & salty. DAY8 better than DAY1
9.2pts
I am 2 for 2 with no premox! 1 bottle to go and I am feeling lucky 🍀

Rather muted nose of oyster shell, lemon and flint - awesome evolution on the palate fatty in the middle with a lingering finish. Fantastic. Competes at GC level - this one feels a bit quieter at the start, but its lingering finale completes a perfect picture. Aerate. — 7 years ago
Writing tasting impressions from memory as it has been many months but wow this was a complex, layered yet lean #marlborough #sauvignonblanc. — 4 months ago
Stunning. Dauvissat perfection. 2012 Clos is perfect tonight, with more fruit definition than Preuses as expected from the site. It’s textural, chiseled and powerful with Chablisen oyster shell minerality layered in a tidal wave of spiced orchard fruit and white flowers. It’s incredibly silky on the palate showing killer volume and density with racy citrusy acids and a sea spray-like salinity to round it out. When Dauvissat is on it’s hard to beat. And this is still young. — 6 months ago
Always singing with pure Lemons and oyster shell. — a year ago
Oily lime and slate. Sea spray, oyster shells, hints of white pepper. Perfectly balanced. Succulent and vivid. Long. Really good — 3 years ago
Thomas Pico is one of my favorite Chablis producers. Chalk, oyster shell, under ripe green apple. Acid High. Delicious. — 4 years ago

A gorgeous nose. All oyster shells, limestone, salinity, hints of lime, greengages, peter. Very poised, saline and cool-blooded. On the palate it is super sophisticated. Very precise floral notes. Rockpool, mellow citrus with super fine balancing acidity. This is deep and profound but pretty light on its feet. A beautiful calm vintage. — 6 years ago
