Light, fruity with a hint of tomato. Super super drinkable. One of my favorite every day wines. — a year ago
Amazing price point and a go-to aperitif wine in my household. Nose has wet gravel, chamomile, lemon, maybe a slight whiff of coriander. Mouthfeel is creamy with ripe lemon, white peach & lime zest, then that mouth-watering acidity kicks in and it’s just easy-drinking loveliness. 😘🤌🏻 — 3 years ago
2017 vintage. @Delectable Wine this is the Union Sacre La Passion de Legionnaire Merlot. Lots of finesse and freshness. Raspberry, red plum, blackberry, tart cherry, pomegranate, a bit of a red floral thing, new oak-inflected vanilla, mocha, and coconut notes. Great texture, definitely lends that Santa Ynez coastal elegance and texture. — 6 years ago
Blackberries, strawberries, black cherry, tobacco on the nose. Blackberries, black cherries — lots of fruit. Soft tannins, medium to high acidity. — 6 years ago
Union Sacré Wines “Sangio” – Sangiovese – 2024
Paso Robles, California 🇺🇸
Overview
A chillable, carbonic-fermented Sangiovese crafted in a fresh, playful style. Unfined and unfiltered, this 2024 bottling leans into vibrancy and drinkability rather than structure or oak influence. Designed to be served cold, it highlights Sangiovese’s natural acidity and red-fruit purity in an easygoing, modern expression.
Aromas & Flavors
Bright and inviting, with fresh cherry, cranberry, and wild strawberry at the forefront. Hints of pomegranate and subtle herbal notes follow, keeping the profile lively and clean rather than savory or earthy.
Mouthfeel
Light-bodied and energetic, driven by crisp acidity and a smooth, supple texture. The carbonic lift makes it affable and refreshing, with no tannic grip to weigh it down. Extremely easy to drink.
Food Pairings
Charcuterie, simple pizzas, tomato-based pastas, grilled vegetables, fried chicken, or picnic-friendly fare. Equally enjoyable on its own as a chilled aperitif.
Verdict
A charming, approachable take on Sangiovese that prioritizes freshness and fun. Not a traditional expression, but a well-executed chillable red that delivers exactly what it promises.
Did You Know?
Carbonic fermentation enhances fruit-forward aromas and soft textures, making wines like this especially suited for chilling and early enjoyment.
🍷 Personal Pick Highlight
A dangerously drinkable chillable red — the kind of bottle that disappears quickly and keeps you reaching for another pour. — 6 months ago
Union Sacré “Noble” 2022
Paso Robles, Central Coast, California, USA 🇺🇸
Overview
A vigorous and wildly expressive skin-contact white blend crafted in Paso Robles’ Tin City. Composition: 34% Pinot Gris, 34% Pinot Blanc, 32% Riesling. Union Sacré is known for its Franco-Californian artisanal edge, and Noble embodies that spirit—a hazy, unfiltered, dry wine that leans into the modern “orange wine” style while keeping it approachable and refreshing.
Aromas & Flavors
Bursts with peach, tangerine peel, grapefruit zest, and white flowers. The Riesling brings tension and aromatic lift, Pinot Gris provides stone fruit depth, while Pinot Blanc adds texture and backbone.
Mouthfeel
Fresh, bright, and layered with a lingering but pleasant finish. The skin contact gives a subtle tannic grip, while fermentation in concrete vats enhances minerality and freshness.
Winemaking Notes
Hand-sorted grapes undergo 14 days of skin maceration in concrete vats, then the wine is aged 5 months before bottling. Unfined, unfiltered, naturally hazy—a hallmark of its artisanal character.
Food Pairing
Pairs effortlessly with grilled shrimp, saffron rice, Mediterranean mezze, or summer salads. Also a perfect “patio pounder” when served chilled.
Verdict
Union Sacré Noble is a playful yet serious orange-styled wine, combining freshness with rustic authenticity. A conversation starter and a crowd-pleaser—exactly what Tin City Paso Robles is all about. Cheers! 🍊✨

Chasing my chaotic self-administered pandemic hair chopping with a Gewurtz from Arroyo Seco which seems to me apropos as I imagine the region as wind-swept and tousled. This wine is not so much and that is a good thing. All is in harmony. There is just the right amount of everything and it hits you in order—the lychees are followed by a green lawn leading to the flower garden full of roses and gardenias all spirited along by a nice amount of acid and powered by a prickling tannin. I’m not normally the biggest Gewurtz fan but I’d reach for this a second time. I’d maybe even pair it with a “hard to pair” thing like artichoke. Something about the floral nature of both I think could line up. Is that crazy? Maybe. But this is coming from someone who just used her kitchen scissors to give herself an intentionally asymmetrical haircut. — 5 years ago

It’s like Midori went to grad school, traveled to Paris, staged at a small Michelin 1, learned the art of subtlety, the beauty of nuance, and come to appreciate the beauty of a long silence — a year ago
In this case, actually, the offspring that this wine mimics is the Union of petite sirah & zinfindel. Thick spicy tangy and powerfully cleansing… Yet without being jagged and overly assertive. Delicious! Medium + weight with a long finish. So good it was even simply sippable — 4 years ago
We went camping close to Los Olivos, CA ⛺️. But the goal was also to visit Union Sacre in Paso Robles on our way to Big Sur. And lucky for us we tasted with a Frenchmen XAVIER ARNAUDIN the winemaker all by ourselves. This guy is a lot of fun! All his whites were excellent and this Riesling is a standout! 20$. Rich 12.4% plenty of acid for balance. Quite herbaceous, tart and salty you almost taste the Santa Barbara sea breeze coming through. Honey melon Meyer lemon hint of mandarine waxy. Some Pro? gave this a 8.5 I cannot agree. For a Cali Riesling this is unique and better than most Tautomers. Highly recommended I will buy more and left with a case of whites when I left the tasting room - a winemaker to watch! — 6 years ago

2025. My favorite of the tasting along with the same wine with 40 days on the skins. — a month ago
