Paaslunch op huis tuin en keukenniveau
Soms klopt alles. Gisteren was zo’n wijnmoment, vandaag was het weer zo’n moment waarop smaken, gezelschap en een glas uitzonderlijke champagne perfect samenkwamen.
In het glas: Billecart-Salmon Cuvée Nicolas François 2008, een champagne met klasse, precisie en diepgang. Rijp en gelaagd, met tonen van geroosterde noten, citruszeste en subtiele brioche.
De mousse verfijnd, de afdronk eindeloos. Voor mij is deze champagne geen aperitief maar dit is een hoofdrolspeler.
De pairing?
Oesters, puur, zilt en perfect in balans met de frisheid.
Tartaar van wortel, sjalot, cornichon en kappertjes met sriracha-mayo, spannend en licht pikant, prachtig gedragen door de structuur van de wijn
Asperges met mousseline, gerookte zalm en Hollandaise, romig, rijk en precies waar deze champagne zijn diepte laat zien
Een paaslunch die nog wel even blijft hangen. De chef van de Kwalitaria was in vorm 😉

Pale gold color. On the nose apple, lemon pie, wet stone. Medium body. Dry. Creamy texture, mineral driven. Fermented in 75% steel tanks which and you can taste it. Long finish with taste of citrus, toast, grapefruit. I would like it more with more dosage. — 4 months ago

Quite light salmon pink , fine constant bubbles . Quite floral , rose , hibiscus , light strawberry , red currant and raspberry . On the palate this is balanced and elegant , strawberry , red currant , quite rounded with a touch of toasty brioche on the finish . Good slightly grippy acidity , medium length finish . I've squeezed all the mystery out of Tempier Rose' over the years. Consistently good. Consistently consistent.
Familiar salmon rose gold. Orange zippy bitter pith and grapefruit sours. Herbs de provence and mild tannin in a syrupy Bandolian texture.

Light salmon hue. Aromas and flavors of apricot, bubblegum, cherry, grapefruit, lemon, saline, strawberry. Clean with a subtle, satisfyingly sweet finish on the palate. Balanced and drinking very well. 50% Hondarrabi Zuri, 50% Hondarrabi Beltza. — 9 months ago
