NOTE TO EXPERT: this is the Hinohatake cuvée This started with just a touch of high-toned candy (especially compared to the Chanterêves Savigny), but settled to reveal a very pretty, sweetly floral character, tempered with more savory herbs and a subtle minerality. I find Burgundian-styles Pinot Noir to be one of the best matches for Japanese food (especially dishes featuring shoyu, sansho, yuzu, etc.), and this was no exception - even with sashimi (with negi ponzu), Kyoto-style taitan relying heavily on dashi, etc. Not massively complex, perhaps, but lots of flavor and not lacking in dimensions. Overall, one of the most satisfying Japanese Pinot Noirs I have had in a while. — 4 years ago

Pinot Noir from Paris l’Hôpital, planted on dark sandy granite. Old vines of 45 years of age and older. Lutte raisonée farming. As the sandy steep slopes are prone to erosion, the middle of the rows are never tilled.
[Winemaker’s notes:] “Floral with bouquets of dark red fruits. Very fine tannins with racy acidity. Complex and structured. Dense yet lifted. Certainly the best Hautes-Côtes de Beaune we have made in 10 years. Performs well above its humble appellation.” — 4 years ago

With a slight nose of candied bacon, sour cherries, plums and blueberry cobbler this is a fantastic Pinot noir. It’s medium bodied, strong ripe red fruits, slight peppery notes and flavors of plum, blueberries and a long lingering finish of wet stone. — 5 years ago
