Just about perfect w/oysters in San Diego! — 10 months ago
Fresh and delicate, with notes of white fruits, pear and peach, fresh apricot and white flowers with roses. Dried fruit aromas reveal it is starting to mature. Lush, generous and creamy. Beautiful exuberance driven by white fruits and lemon zest notes on the finish — a year ago

Armand de Brignac “Rosé” Brut – NV
Champagne, France 🇫🇷
Overview
A prestige multi-vintage Rosé Champagne crafted from estate-owned vineyards in the Montagne de Reims, including Rilly-la-Montagne, Chigny-les-Roses, and Ludes. Blend composition; predominantly Pinot Noir, supported by Chardonnay and a smaller proportion of Pinot Meunier, with a measured addition of still red Pinot Noir wine to achieve its delicate rosé hue. Produced in small batches, this cuvée emphasizes finesse, purity, and subtlety rather than power.
Aromas & Flavors
Fresh wild strawberry, raspberry, and red cherry glide out gently, followed by rose petal, citrus zest, and faint brioche notes. The fruit profile is precise and lifted, with a quiet chalky undertone and restrained pastry character.
Mouthfeel
Exceptionally delicate and refined. The mousse is fine and silky, with bright acidity carrying the wine effortlessly across the palate. Light-bodied for Champagne, elegant and poised, finishing clean and graceful without weight or richness.
Food Pairings
Tuna tartare, salmon sashimi, shellfish, light charcuterie, soft cheeses, or as an elegant aperitif in good company.
Verdict
Not my preferred Champagne style, but undeniably well executed. Subtle, polished, and extremely delicate, this Rosé delivers finesse over intensity and proves its quality through balance and restraint.
Did You Know?
Armand de Brignac Rosé is assembled using multiple vintages and finished with the traditional Champagne method, with each bottle completed by hand, a rarity among luxury Champagne brands.

Champagne Cattier – Cuvée Brut Premier Cru N/V
Reims, Champagne – France 🇫🇷
Overview
A Premier Cru blend dominated by 40% Pinot Noir, followed by 32% Chardonnay and 28% Meunier, sourced primarily from the villages of Ludes, Chigny-les-Roses, and Rilly-la-Montagne. A house Champagne that embodies Cattier’s signature style, crafted with 41% reserve wines and aged well beyond the minimum 3 years, showcasing both tradition and depth.
Aromas & Flavors
Lively and elegant, the nose opens with ripe plum, white flowers, and acacia, accented by subtle biscuit notes. On the palate, a mouth-coating wave of brioche and beeswax meets bright lime peel, balanced by a refreshing acidity. The finish lingers gracefully with a nutty undertone and a whisper of chalk.
Mouthfeel
Energetic yet refined, with a fine bead and polished mousse. Dosage at 6 g/L keeps it precise, clean, and perfectly balanced between freshness and roundness.
Winemaking Notes
41% reserve wine gives layered complexity and depth, while extended cellar aging elevates the harmony and finesse beyond the standard.
Food Pairing
Perfect with oysters, sashimi, or light seafood starters. Equally delightful alongside soft cheeses or almond-based pastries.
Verdict
A quintessential Cattier expression — fruit-driven, floral, and elegantly textured. Hard to stop at just one glass! Cheers 🥂 — a year ago
So very pretty in the glass, a typical vibrant Saignée color that we all love. Pure fruit loveliness on the nose with wild strawberries and cherries. Cranberries and roses with fresh herbs. A touch of pepper, a dash of spice, and a dollop of vanilla.
A pure Meunier from Vrigny, aged for three years. Racy and lively, it’s a nicely structured pour. At this age it does lack a little emotion. That special feeling the right wine, or person, can produce. Not quite enough personality…yet. But as we know, time can change that.

Handcrafted in small batches, this cuvée exemplifies depth, polish, and harmony, a benchmark luxury Champagne that delivers substance beyond the spectacle. Dosage is kept discreet, allowing purity, texture, and natural vinosity to shine.
Aromas & Flavors
Golden apple, ripe pear, and baked quince lead the nose, followed by brioche, toasted hazelnut, almond cream, and hints of citrus oil. Subtle honeyed notes and chalky minerality add impressive aromatic layering.
Mouthfeel
Silky yet energetic. The mousse is fine and persistent, framing a palate that is both rich and precise. Chardonnay provides lift and elegance, Pinot Noir adds structure and depth, while Pinot Meunier rounds the mid-palate. Long, polished finish, lingering but never heavy or fatiguing.

A spectacular Champagne that justifies its prestige. Complex, impeccably balanced, and deeply satisfying, the Gold Brut delivers true luxury through craftsmanship and terroir, not excess.

🍷 Personal Pick Highlight
One of the most delicious Champagnes tasted recently, memorable and worth the investment. — 6 months ago
The Queen of Ambonnay. A true unicorn, so so rare and it’s in such a killer spot, not at all at the end of its life (I’m sure there can be some bottle variation), but it’s just fantastic tonight, rich, immensely powerful and perfumed with a captivating core of red berry fruit, red roses and a chalky mineral edge providing the most seamless balance to its layers and championing the Ambonnay terroir. A very special bottle that showed perfectly 🙌🏻 — 3 years ago
Very light on the nose, but wonderful lemon followed by orange taste. Nice and dry with no sourness. — 5 years ago
