A little reward for one of the cooks (me) after getting the Christmas Eve meat sauce simmering. (My sister-in-law is doing the fish sauce, if you’re wondering.) Fresh, appley, minerally nose. Very perfumed and deeply aromatic. Great balance on the palate. Bone dry, some fruit, deep stony minerals. Crisp acids. Lovely. — 2 years ago

This is very much like a Bourgogne Rouge or Sancerre rouge from a top-tier domaine. Pale color. Very precise nose shows deep, just-ripe, pure cherry, a slight herbal note, and lots of crushed stone, seemingly on the limestone end of the spectrum. Intense but light-footed in the mouth, there’s deep, tart-but-ripe cherry fruit initially, turning savory and minerally on the long finish. Crisp acids. Very nicely done. 2017 Ravine White Springs Vineyard Dry Riesling (Finger Lakes). Nine years old and still seems youthful. Great nose of zesty Granny Smith and slightly unripe Cortland apples and lots of high-toned stony minerality. Palate is concentrated and intense, lots of crisp acid to balance the deep fruit and intense stones.
