The Monastery where Bubbly production all began around 500 years ago. Primarily Mauzac with small amounts of Chardonnay and Chenin Blanc blended in. Medium gold color. Aromas of orchard and citrus fruit with hints of white flowers and raw nuts. Flavors of juicy green apples and pears, granite dust and lemon zest. Slight vegetal note on the long palate cleansing finish. Plenty of bubbles but not in a steady stream. Creamy mousse that does dissipate rather quickly. Medium body and texture. Quite lively! This was very closed for the first pour and benefited greatly from some time (1hr) to breathe. Once it opened up, it had a liquid smoke hints on a crisp, grassy nose. Tasted of blackberry, black cherry, and cola with along acidic finish. — 4 years ago

Very dark Ruby with rich fruit aromas with sweet tones. On the palate blackberry and black plum flavors with sweet spice and cacao notes. Soft full tannins, long finish with smoky oak and earthy ending. Perfect to drink now. — 6 years ago

Dark ruby in color with a wide reddish rim

The nose is still tight with red fruits and light oak notes.

Medium plus in body with medium acidity.

Dry on the palate with nice complexity.

Showing black currants, black cherries, light oak, tobacco leaf, herbs, earth, herbs and black pepper.

Nice length on the finish with fine grained tannins and tangy raspberries.

This is a delicious Cabernet Sauvignon from Mount Veeder in Napa Valley. Elegant and nicely balanced, with an Italian feel. Complex and entertaining.

Still young, and needs a few years in the bottle to mature properly. Will continue to age nicely in the next 15 years.

Good by itself as a sipping wine or with a big piece of steak.

100% Cabernet Sauvignon grapes were aged for 19 months in (65% new) French Oak barrels.

Simply WOW!! I have now experienced the pleasure of tasting my initial First Growth Bordeaux. Simply unbelievable! 90% Cabernet Sauvignon. Highly aromatic! A lovely nose of violets, pencil shavings, cigar box, and red and black berry fruit. The pallet is red fruit forward with accents of cooked blackberry, and Belgian chocolate.
