Great sake but you better like fennel/mild licorice if you drink — 8 months ago
Acid: 2; Body: 3; Alc: 2; Tannin: 2; Sweet: 4; Fuji apple, mango, lime, lemongrass, floral on the nose — 3 years ago
Hints of reduction at the start with Meyer lemon and pear fruit. With air the wine gains complexity with Anjou pear, Fuji apple and Meyer lemon accented by matchstick, hazelnut creme anglaise plus subtle minerality. Palate is a nice combo of pear and lemon fruit with almond and lees. Acidity is quite bright which helps balance the wines palate richness. Supple fruit and mineral finish with persistence. Seems to be a start of maturity with potential for the aromas to show further complexity. — 4 years ago
Pale straw gold with silver highlights. Somewhat shy nose of underripe Fuji apple and Asian pear. Firm acidity leads the smoky/flinty light-bodied palate of underripe pome fruit and citrus rind. Remarkably long (8-9 secs) palate cleansing finish. Merciful saints! This is the entry level wine from the Dagueneau portfolio and it makes you want to go higher! Food is, of course, its friend, but if you’re into “sipping culture” this will work for you as well. Seafood (cooked or sushi) is a particularly fine pair, naturally. Drink now through 2027. — 5 years ago
Bubble gum sweetness and palette cleansing taste pairs well with medium flavour food — 6 years ago
Lovely terrier driven mineral nose with hints a hazelnut laced with lemon peel and Fuji apple fruit. Palate is missing a touch of intensity but mineral and citrus flavors. Thoroughly enjoyable but seeking a bit more complexity. — 7 years ago
Tasted at Taiheizan kura in Akita, Tohoku, Japan with owners Shin and Eiko Kodama.
Incredibly perfumed with white flowers.
Yellow plums, ginger, apricot ripe pear with rich white stone peach.
Minerality, crisp, luscious and mouth feel for days.

This RESERVE offering was opened at 6yrs old and has proven Dave Collins is an east coast premier winemaker. He has overseen the complete development of those 60+ acres and understands how to elevate what the terroir gives. This extended aged Chardonnay had all the class and finesse of an aged burgundy. Beautiful crème brûlée, Fuji apple, and a touch of poached pear on the palate with tremendous mouth feel and an elegant extended finish. I have had some losers in my aging library project, but this was a clear walk off home run! — 4 years ago
A crisp bite of a Fuji apple with fresh minerality that is as nice with food as it was on its own. For a Chablis this is close to a Meursault! — 5 years ago
Save Kumamoto Project. So delicious, sparkly, yeasty and sweet — 7 years ago
2nd bottle for Glorious Mt Fuji and they make some of the most sublime sake. This is also nama sake with slight sparkling, melon taste and finishes with a lychee backend. Shooting Star just delicious paired with steamed egg — 7 years ago
Smells like flowers and tastes like biting into a not-so-sweet Fuji apple. Spicy food dials down the sweetness and dials up minerals in a pleasant way. Great everyday wine. — 3 years ago

Clear straw color. Aromas of Fuji Apple, pear and dried tamarind. Fantastic! Dry, citrus finish. — 5 years ago

Restaurant tasting notes: Yamagata / Delicate notes of green apple on the nose; soft and melting on the palate; notes of green apple and candied sugar; finishes with a delicate acidity — 7 years ago
