Passe-tout-grain produces Pinot Noir and Gamay (often 50/50) blends vinified and aged together. They are traditionally simple and inexpensive wines. A few winemakers try it out with rigor and know-how, thus producing gems of freshness with a crisp character.
Unsulphured, unfiltered, biodynamic. It is a magnificent natural wine. Sublime nose, on an explosive floral bouquet. We bite into the fruit. Lively and ample. The finish is persistent on fine and coated tannins.

L’appellation Passe-tout-grain produit des assemblages pinot noir/gamay (souvent 50/50) vinifiés et élevés ensemble. Ce sont traditionnellement des vins simples et bon marchés. Quelques vignerons s’y essayent avec rigueur et savoir-faire, produisant ainsi des joyaux de fraîcheur au caractère croquant.
Non soufré, non filtré, biodynamic. C’est un magnifique vin nature. Nez sublime, sur un bouquet floral explosif. On croque dans les fruits. Vif et ample. Un délice de vin léger. La finale est persistante sur des tanins fins et enrobés.

A reminder that even entry-level Burgundy, when done right, can stay true to its roots.

Aromas & Flavors
Fresh citrus zest, lemon peel, green apple, and white stone fruit lead the way, followed by subtle floral hints and a faint chalky minerality. There’s no overt oak influence, keeping the profile clean and transparent.

Mouthfeel
Light to medium-bodied with crisp acidity and a smooth, linear texture. Balanced and refreshing, with enough structure to feel composed rather than dilute. The finish is clean, gently saline, and quietly persistent.

Food Pairings

La Syrah

A very natural Syrah, by Burgundian winegrowers. Aging for one year in old casks. Crunchy and spicy, with peppery and liquorice flavors. Blindly we think of a high-quality Croze-Hermitage. As is often the case with low-sulfur wines, there is good volume and freshness. An accessible and refined wine. A beautiful domaine whom I discover the different vintages, each more successful than the last.

Une Syrah tres nature, par des vignerons Bourguignons. Élevage d’un an en fût ancien. Croquant et épicé, avec des saveurs poivrées et réglisse. À l’aveugle on pense à un Croze-Hermitage de haute facture. Comme souvent avec les vins peu soufrés, on a beau volume et de la fraîcheur. Un vin accessible et raffiné. Un beau domaine dont je découvre les différentes cuvées, toutes plus réussies les unes que les autres.

Extremely savory. Deep red color. Intense aromas of mushroom, Forrest Floor, leather and dark red fruits. Pallet also features mushrooms along with cranberry, bramble fruit and black raspberry. Hint of tobacco on the medium finish. Firm but elegant tannins. Quite interesting. — 4 years ago
