Petit Chablis, Chablis

Domaine William Fèvre

Vaillons Chablis 1er Cru Chardonnay 2019

Medium lemon core . Some ripe pear , citrus, white flowers , light white peach and red apple notes also with just a touch of toastiness. Quite ripe and generous on the nose . On the palate this is also generous in style , creamy ripe pear and lightly honied apple , white peach , though there are some more chalky , seashell elements that turn up on the finish . This is quite rounded but has enough energy and acidity to balance well, alcohol is also balanced , and there is a light saline hint also on the moderate length finish . This is drinking well now and I don’t see it being particularly long lived , so best over the next 5 years or so — 10 days ago

Nose: mineral. Lemon oil. As this opens lemon flower.

Palate: mineral. Rich. Sweet lemon. Quite delicious. As this opens classic Chablis. Petrified minerals.

Les Clos Chablis Grand Cru Chardonnay 2012

Stunning. Dauvissat perfection. 2012 Clos is perfect tonight, with more fruit definition than Preuses as expected from the site. It’s textural, chiseled and powerful with Chablisen oyster shell minerality layered in a tidal wave of spiced orchard fruit and white flowers. It’s incredibly silky on the palate showing killer volume and density with racy citrusy acids and a sea spray-like salinity to round it out. When Dauvissat is on it’s hard to beat. And this is still young. — 25 days ago

Domaine François Raveneau

Vaillons Chablis 1er Cru Chardonnay 1989

Smells like an aged Raveneau, honey over minerality, still vibrant acidity, full-bodied w/nice richness, long, lingering finish, not quite as fine as the 1989 Chapelots 1er Cru I posted on recently, but very close!! — 9 days ago

Chablis Chardonnay 2022

This is my entrance into the world of Chablis. Don't know how it took me so long, but I've also never seen Top Gun 🤷‍♂️ This wine has a supple mouthfeel despite it's bright acidity on the back of my tongue. Flavors of lemon and peach, with plenty of minerality on the finish. Thanks to my friends who gave recommendations- this is the first one from your lists that I found locally. Sorry we took over your comment section, @Doug Powers !

Awesome! Enjoy! I do have a sweet spot for Chablis and more often than not, I naturally reach for a Chablis when I get homesick. It reminds me of home and past times when I used to live in Paris.

Vaillons Chablis 1er Cru Chardonnay 2021

2021 vintage. Decanted and tasted after 30 minutes at approximately 55 degrees. Medium body. Powerful core of acidic/citric concentration swaddled by delicate lanolin and oak. Textbook essential Chablis yet clinical and complicated. Spectacular. 2.25.26. — a month ago
