Saint Julien Red Bordeaux Blend 1982

Again quite deep ruby , with a wider garnet rim , slightly cloudy appearance. This is a little more smudged on the nose with , earthy , slightly swimming pool note , tobacco and some dried flowers . However with time this starts to gain stature and complexity with cigar box , cedar and grafite notes . On the palate this is a little rounder and deeper in style , a bit more generous . More cassis and blackberry , along with some cherry . Herbal tobacco notes , fresh acidity and more rounded tannins , perhaps better length that the Ducru too. This also is showing well , if not as young as the Ducru , from now and over the next 10 years in this format. — 3 days ago

Pauillac Red Bordeaux Blend 1996

Tasted blind. Medium ruby garnet , medium garnet rim . Quite classic and elegant, with cigar box , grafite and some dried earth , some slightly toasty notes also . On the palate this shows good balance , fresh acidity , classic blackcurrant , cigar box , earthy touch . Good depth and length , grafite tinged finish , quite correct and no extra sweetness or weight . Good length and a spicy , mineral , blackcurrant tinged finish . Lafite ? Still young , really well balanced. From now and over the next 10 to 15 years. This was actually the Mouton , which was a great surprise, but certainly a pleasant one ! — 3 days ago

Opus One

Napa Valley Cabernet Sauvignon Blend 1985

Presented double-blind at dinner. The wine pours a deep garnet with a near opaque core and a slightly orange rim with considerable variation; medium viscosity with moderate staining of the tears and some fine sediment. On the nose, the wine is vinous with notes of ripe and desiccated fruit: black currants, blackberries, plum, pipe tobacco, capsicum, pencil shavings, a touch leather, organic earth and a mix of dried herbs and some fine warm spices. On the palate, the wine is dry with medium tannin and medium+ acid. Confirming the notes from the nose. The finish is medium+. Really tasty stuff.

Initial conclusions: this is an old wine, likely 30-40 years old. That being said, it’s still very distinguishable as it’s showing varietal characteristics. This could be Cabernet Sauvignon (or a blend thereof), Cabernet Franc (or a blend thereof), or Merlot (or a blend thereof). I can see this being Napa because the fruit is still showing some generosity. But there’s a lot of non-fruits there too. Regardless, this was giving Left Bank vibes so I could also see this being Bordeaux from a great vintage like 1982. And that’s my call, Cabernet Sauvignon-blend from France, Bordeaux, Saint-Estèphe, from a classified growth like Calon-Ségur. Shucks. But I’m not mad about my choice! Old Opus One’s are tricky to differentiate. Drinking very well right now but this will live well past 2035.

Private Reserve Georges de Latour Napa Valley Cabernet Sauvignon 1985

Opened about two hours prior to service; enjoyed over the course of a couple hours. The 1985 pours a deep garnet color with an orange rim and a slightly hazy, near opaque core; medium viscosity with moderate staining of the tears. On the nose, the wine is vinous with notes of dried, desiccated blackberries, pipe tobacco, leather, organic earth and warm spices. On the palate, the wine is dry with medium tannin (integrated) and medium+ acid. Confirming the notes from the nose. The finish is medium+. A lovely, mature wine that should be enjoyed over the next several years. Drink now through 2030. — a month ago

Viña Tondonia Reserva Rioja Tempranillo Blend 2012

Upon opening, this seemed a bit disjointed, with muted fruit flavors and strong herbal notes. Decanting didn’t seem to help much, but day 2 it finally opened up nicely, with nice complexity and intensity on the palate. Cherry, raspberry, cassis, bay leaf, dried Italian herbs, anise, cloves, vanilla, cedar, earth, and balsamic notes all come through. Really tasty, but maybe a bit too intense. I can see this improving with a few more years of aging so the flavors coalesce and soften a bit more. — 3 months ago

This is far too young but when I have a chance to look in on Cheval Blanc I do.

Nose shows; ripe blackberries, strawberries, dark cherries, plum, moist clays, coffee, moist herbs, roasted chestnuts, amazing florals that are red flowers, red roses, lilacs & violets.

The palate shows some nice evolution but still too young to drink. Ripe and slightly candied; blackberries, strawberries, dark cherries, raspberries & plum. Moist clays, coffee, moist herbs, roasted chestnuts, espresso, mid berry cola, caramel, cinnamon, clove, nutmeg, crazy, round, bold spice, moist tobacco, used leather, graphite, dark, rich earth, dry stone, limestone, soft oak powder notes, amazing florals that are red flowers, red roses, lilacs & violets, round, rainfall acidity, balance, mid structure/tension, grand length and a two-minute long polished finish.

Barbaresco Nebbiolo 2021

Popped and poured; enjoyed over the course of two days. Delicious throughout. The 2021 pours a bright garnet color with transparent core; medium+ viscosity with no staining of the tears. On the nose, the wine is developing with powerful notes of Morello cherry, raspberry, cranberry, red flowers, orange zest, some tar, talcum powder, dried herbs and dry, organic earth. On the palate, the wine is bone dry with high tannin and medium+ acid. Confirming the notes from the nose. The finish is long. This is about as sapid of a young Classico I’ve had from Produttori. It’s a bold wine right now but some time on its side will bring more into balance. Drink now with some patience through 2051. — 8 days ago

Tasted Blind. Again very similar appearance with ruby centre still , slightly thinner garnet rim . Different on the nose and on the palate to the others . Sweeter more toasty notes , earthy also , tobacco touches , bonfire , fire side hints. On the palate this has a spicy note , with a mix of red and black fruits , that earthy fireside hint . Good tobacco tinged finish . Juicier tannins , and balanced acidity . Really poised and pretty , spiced fruits, perfectly balanced . Lovely to drink now , though will give another decade of enjoyment . Haut Brion ? — 3 days ago

Opened about 90min prior to service; enjoyed over the course of a few hours. The 2001 Monte Bello pours a deep garnet with a near opaque core; medium+ viscosity with moderate staining of the tears. On the nose, the wine is developing with lovely notes of black currants, blackberries, plum, tobacco, purple flowers, an intoxicating mix of exotic Eastern spices, some cocoa, inorganic earth and minerals. On the palate? The wine is dry with medium+ tannin and medium+ acid. Confirming the notes from the nose, the finish is long and impeccably balanced. To my palate, this bottle has reached the age when Monte Bello starts to really become interesting. What a delight! Drink now with some air, through 2051. — a month ago

I recently had a conversation with a few Joseph Phelps Ambassador’s at Pebble Beach Food & Wine in April. I said, I had every vintage of Insignia back to 2006 in storage. They said, “you should really drink up the 2006.” So, I coravined an 06 last weekend, a taste. I agreed then. But tonight not the case, it shows it still has a fair amount of life. Another 5-8 yrs and perhaps plus.

My Ribcap, a definition of Medium Rare Plus.

The nose reveals floral; blackberries, black raspberries, both plums, poached strawberries, dark cherries and blue fruit notes. Melted dark chocolate, mocha, caramel, softly layered baking spices, very underrated graphite, steeped tea, mid berry cola, red licorice, limestone powder, dry top soil, dry twig, red, dark candied to slightly withering florals w/ liquid violet cola.

The palate shows well resolved, rounded, velvety M+ tannins. Nicely ripe fruits that are floral; blackberries, black raspberries, both plums, poached strawberries, dark cherries and blue fruit notes. Melted dark chocolate, mocha, caramel river, softly layered baking spices-clove, nutmeg, cinnamon stick & vanillin, warm caramel, dark Asian spices with palate burrowing heat, dry tobacco/ leather, cedar, grilled meats, very underrated graphite, sweet tarriness, black licorice, steeped tea, mid berry cola, red licorice, limestone powder, dry top soil, dry twig, red, dark candied to slightly withering florals w/ liquid violet cola, candied to withering; dark, red, blue florals wrapped in liquid violets, epic rainfall acidity, well balanced-structured-toned, elegant finish that lasts minutes and falls on earth & heated spice.

Popped and poured; enjoyed over the course of a two days. Better on Day 2. On the pop and pour, this bottle was backward and really seemed resistant to show much. I didn’t detect any real flaws or faults…just sort of, “meh”. On Day 2, it had opened considerably. The 2017 pours a deep garnet with a near opaque core; medium viscosity with light staining of the tears. On the nose, the wine is developing with notes of tart and ripe blackberries, currants, mixed flowers, black tea, ferrous earth and a mix of cool and warm spices. On the palate, the wine is dry with medium+ tannin and medium+ acid. Confirming the notes from the nose. The finish is medium+. Drink now with patience and through 2042. — 4 months ago

+1 hour decant(some sediment). A gorgeous dark garnet with bricking. On the nose: mesmerizing areomatic notes of dark red fruit, currants, forest floor, floral, cigar wrapper, pencil shavings. Taste: velvety, vibrant, fresh wine with brambly dried blackberry/cherry, earth, graphite, wet stones, and a cedar gamey raspberry long finish. YUM! Premier Grand Cru Classé Pauillac Red Bordeaux Blend 1996

Tasted blind. Again medium deep ruby with medium wide garnet rim . Again slightly aloof , showing a touch of herbaceous blackcurrant , mineral and slate notes . Probably the most closed of all coming back . Quite deep and rich again , mineral , blackcurrant, wet stones . Muscular tannins and balanced acidity , deep with a slight herbaceous touch on the decent finish . Latour ? Compared with the rest this is slightly pedestrian, even though it is still an excellent wine it’s not as thrilling as its Pauillac stablemates Lafite or Mouton. Perhaps needs even more time , come back in 5 years and will last well a further 10 -15. — 3 days ago

Château Pichon Longueville Comtesse de Lalande

Pauillac Red Bordeaux Blend 1994

Dark ruby in color with a wide reddish/ brick rim.

Medium plus in body with medium acidity.

Dry on the palate with a beautiful nose.

Showing black plums, black currants, cedar, dried figs, licorice, dark chocolates, earth, rhubarb, tobacco leaf, light black tea and black pepper.

Long finish with soft tannins and tangy cherries.

This 32 year old Pauillac is still drinking beautifully, but a bit past its prime. Rich and elegant. Very complex and spicy.

This Second Growth Bordeaux needed 5 hours to open up properly, and was not that special right out of the bottle.

Nicely balanced with a nice mouthfeel, and still showing enough fruits to balance the earth notes.

Good by itself as a sipping wine, and with food.

A blend of 45% Cabernet Sauvignon, 35% Merlot, 12% Cabernet Franc and 8% Petit Verdot.

12.5% alcohol by volume.

+1 hour decant(modest sediment). A striking still dark purplish crimson color with bricking. On the nose: Seductive notes of dark fruit, sandalwood, cigar wrapper, herbaceous, stewed meat, pencil lead, worn leather. Taste: silky, layered, vibrant wine with dried plum/cherry, cigar leaf, graphite, that Cos spice, crushed gravel, hint of chocolate, and a hauntingly long dry finish. YUM! Hermitage Syrah 1994

At this point, with this group, a Legends dinner simply wouldn’t be appropriate without at least one bottle of Chave Hermitage.

Opened about 90min prior to service; enjoyed over the course of a few hours. The 1994 Hermitage pours a slightly hazy garnet with a near opaque core; medium viscosity with moderate staining of the tears. On the nose, the wine is vinous with perfumed notes of dried brambles, dried blueberry, dried purple flowers, black olive, mushroom, espresso, leather, stony earth. On the palate, the wine is dry with medium+ tannin and medium+ acid. Confirming the notes from the nose. The finish is long and slightly sanguine. Delicious with the 5 Spice Cured Duck prepared with marinated Bing cherries, crispy shallot and Olathe corn polenta. It was such a pleasure to taste the ‘94 Chave next to the ‘85 Gentaz. Two Northern Rhône Legends working with their respective terroirs. Where the Gentaz was all about the aromatics of Côte Rôtie, the Chave was brought more of the power from the Hill of Hermitage. Drink now through 2056.
