WA Review 95 points ( dense and structured, yet still vibrant and very pure, the 2007 Abelard is 90% Grenache and 10% Syrah. Loaded with deep blackberry and black cherry fruit, licorice, crushed stone and hints of roasted herbs, it is full rich and concentrated, with knockout precision and focus. It is serious stuff and still a baby. Drink it over the coming decade)
96 points for me since it’s aged very well. — 9 months ago

Not too dry. Light fruit flavors, but not sweet. Nice balance of crisp and mellow. — 5 years ago
Aromas of pine trees and cinnamon, a Christmas like scent, with more subtle orange, date, and sweet chocolate. Taste of date and plum with oak, chocolate, almond, and orange. — 5 years ago
Lovely light bodied Pinot, damp and earthy with strawberry-cherry freshness. Great all around quaff from #weygandtwines — 6 years ago
Besserat de Bellefon “Bleu Brut” NV, Champagne, France 🇫🇷
Overview
A gastronomic Champagne crafted by Besserat de Bellefon, known for producing wines designed specifically for food pairing. This cuvée is composed of 45% Pinot Meunier, 30% Chardonnay, and 25% Pinot Noir, with disgorgement in January 2022. The house style intentionally uses a lower dosage during secondary fermentation to create a softer, finer mousse.
Aromas & Flavors
Intense yeasty notes, lime blossom, fresh citrus, and baked brioche. With air, hints of honeysuckle, toasted hazelnut, and subtle pastry cream begin to emerge.
Mouthfeel
Medium-bodied with an elegant and diaphanous mousse. The bubbles are extremely fine and silky, creating a refined texture while maintaining vibrant freshness and balance.
Food Pairings
Oysters, scallops, sushi, roasted chicken, creamy cheeses, or mushroom-based dishes.
Verdict
A refined and gastronomic Champagne that prioritizes texture and finesse over aggressive effervescence. Elegant, balanced, and built to shine at the table.
Did You Know?
Besserat de Bellefon intentionally reduces the pressure during secondary fermentation to about 4.5 atmospheres instead of the usual 6, creating a softer, creamier mousse designed to pair seamlessly with food.
🍷 Personal Pick
A beautifully textured Champagne with ultra-fine bubbles and impressive complexity. A fantastic example of a house style built for gastronomy rather than pure aperitif drinking. — 4 months ago
From Chambers on 5/4/2025. Crisp bright grapefruit and jasmine — a year ago
Green apple, pineapple, minerality and a lovely waxiness. It's clean with a sweet acidity and notes of stone fruit. Really delicate and something I'd happily drink again and again! — 5 years ago
Black fruit, caramel, licorice and a nice hint of menthol on the nose, dried fruits with some licorice on the palate — 5 years ago
2019 vintage. Bought at L'Arbre à Vin. Drank with Lynn's pan grilled chicken breasts at the gîte on 6/7/20. Light body but well balanced fruit and acidity. — 6 years ago
V17. Simply good!! Creamy Raspberry and strawberry fruits. Puns long flinty finish. — 7 years ago
Honeyed nose, with peach, apricot, citrus, wet stones, subtle oak and med acid. Oak comes through more on the palate, but isn't intrusive. Nutty, medium bodied, waxy and round in the mouth. Intriguing wine.. ABV a bit up there for me, 14%, but balanced. I'm a fan. BBQ pork loin working well. — 9 years ago

Gorgeous nose, huge fruit, blood, violets, meat, and a hint of mint. Gorgeous and pure, with amazing drinkability and unreal purity. One of the best VDF wines I’ve ever tasted. — 5 days ago
