Crafted from Margerum’s top Sauvignon Blanc vineyard sources in Happy Canyon of Santa Barbara, Sybarite is a more textural and layered interpretation of the variety. Rather than emphasizing overt tropical fruit, it focuses on elegance, persistence, and a refined sense of place.

Aromas & Flavors
Lemon zest, white peach, grapefruit, subtle melon, fresh herbs, and delicate floral notes unfold over a beautifully mineral core with hints of citrus peel and wet stone.

Mouthfeel
Silky and beautifully balanced with gentle acidity, remarkable texture, and a graceful, lingering finish. Precision and finesse take center stage rather than sheer intensity.

Food Pairings

2019 vintage. Oak attack if served above 65 degrees. Def essential to get that temp down to the 55-64 range so as to conduct pleasant conversation. Otherwise, it’s just screaming/noise. Previous vintage exhibited the same tendency whereas 2017 and before generally didn’t (to this extreme). Hoping it’s not trending that direction but suspect it is. 1 hour decan(decent chunky/fine sediment). A striking still dark garnet color. On the nose: Captivating notes of dark fruit, stewed meat, mushroom, eucalyptus, roasted coffee bean. Taste: silky, opulent, structured wine with dark cherry, tobacco, charred earth, currants, herbs, pepper, and a coffee-pencil lead long finish with just a touch of heat from the alcohol. Light garnet color. Very interesting nose and palate of red fruits, rose petals, dried herbs, black tea, bergamot and sweet baking spices. Hint of eucalyptus on the long, complex and earthy finish.
