Paired with wagyu beef tatare and prime Striploin. Excellent. — 7 days ago
Popped and poured; enjoyed over the course of a few hours. The 2015 “Southing” pours a deep ruby color with a transparent core; medium viscosity with light staining of the tears. On the nose, the wine is developing with notes of ripe and bruised strawberry, raspberry, pomegranate, red flowers, mushroom and fine baking spices. On the palate, the wine is dry with medium tannin and medium acid. Confirming the notes from the nose. The finish is medium. Drink now through 2035. — a month ago
Slightly disappointed, had higher hopes based on the reviews. Although company was great, NYT, couch, candle, cheeseboard. #CPtheVP — 17 hours ago

2005 vintage.
Rich black cherries, cocoa spice, orange peel, dark flowers, subois and earthy.
Long generous finish with crisp acidity and fine grained tannins.
This was bequeathed to me years ago at a Celebration of Life for a gentleman who was greatly influential and guiding on my wine journey.
A stunning wine from an incredible individual.
Cheers everyone.

果実味、酸味、タンニン、とてもバランスがよいが、もっとよくなる。タンニンがしっかり感じられるが、あと5年?10年経つと、さらにスムーズな口当たりになりそうわ、
さらに良くなる。

Light bodied. Very good — a month ago
+2 hour decant(loads of sediment). A splendid dark crimson color. On the nose: Intense notes of stewed ripe red fruit, clove, soy sauce, pencil lead, meat. Taste: silky, rich, hedonistic style with some plum/blackberry, licorice, mineral, graphite, soil, and a spiced earthy medium plus dry finish. Enjoyed it more 3 years ago as the opulent fruit fades with this very extracted wine. — 2 days ago

Medium deep garnet ruby with a narrow garnet rim . Dusty grafite , cedar and cassis , currants , oyster shell , quite deep and classic . On the palate this is quite dense and tannic still , deep dark cassis , herbal tinged cedar and very grafite tinged on the finish . Fresh acidity , but still good mid palate richness and even though the tannins are quite dry and grippy , this is well balanced and relatively generous . Good length on the classic grafite , oyster shell tinged finish. This didn’t need a lot of decanting time to show well , though it certainly changes and improves with time in the glass . Classic in style , but still quite generous for Latour , this is just reaching its drinking window , will continue at this level for another 5-10 years at least and probably more. — 13 days ago

Her Mir Tage
I never expected the 2011 Chambertin to have such a firm backbone! I opened it yesterday at 3:30 for decanter breathing, then started glass-breathing at 6:30. Right after pouring, it was extremely tight – it wasn't until 8:30, after two full hours in the glass, that the aromas finally emerged: intense floral and powdery rose notes, with a powerful structure, great depth, and hints of chocolate, earth, leather, tobacco, and a peppery spice. The fruit was certainly there, but it wasn't soft or delicate. To be honest, this was a great wine in terms of aroma, structure, and quality – but it wasn't easy drinking. It felt like hard work, and frankly, it's not my preferred style. I took half the bottle home. Then tonight at 6:00, I opened the remaining half – and wow, the nose was bursting with wild roses, violets, and powdery perfume. The palate was a pure delight: the tannins had turned incredibly silky, with black cherry and sour plum intertwined, finishing clean, sweet, and refreshing. Completely opened up. This wine, when closed, is deep, introverted, and grand in structure; once open, it becomes flamboyant and exuberant. From now on, I think the best approach for Chambertin is an 8-hour decanter breather, followed by glass-breathing to appreciate its evolution along the way. — 11 days ago
