Paaslunch op huis tuin en keukenniveau
Soms klopt alles. Gisteren was zo’n wijnmoment, vandaag was het weer zo’n moment waarop smaken, gezelschap en een glas uitzonderlijke champagne perfect samenkwamen.
In het glas: Billecart-Salmon Cuvée Nicolas François 2008, een champagne met klasse, precisie en diepgang. Rijp en gelaagd, met tonen van geroosterde noten, citruszeste en subtiele brioche.
De mousse verfijnd, de afdronk eindeloos. Voor mij is deze champagne geen aperitief maar dit is een hoofdrolspeler.
De pairing?
Oesters, puur, zilt en perfect in balans met de frisheid.
Tartaar van wortel, sjalot, cornichon en kappertjes met sriracha-mayo, spannend en licht pikant, prachtig gedragen door de structuur van de wijn
Asperges met mousseline, gerookte zalm en Hollandaise, romig, rijk en precies waar deze champagne zijn diepte laat zien
Een paaslunch die nog wel even blijft hangen. De chef van de Kwalitaria was in vorm 😉

Nose is stunning, baby Chassagne 1er Cru all the way: green apple skin, green apple flesh, white flowers, lime zest, lime flesh, and that clean Burgundian mineral snap. Palate is unreal: concentrated, savory, juicy, nimble, elegant, pure, bright, and mouthwatering. A little savory pull on the finish, with terrific length and energy. This is Chassagne Premier Cru quality, and I will die on that hill. After a few hours the finesse is off the charts. Stunning wine. 9.5 to 9.6. — 4 days ago
From a 1ha parcel of vines nearing 100 years old. If memory serves me correctly, Catherine and Pierre had introduced biodynamic practices the previous year (1994).
Popped and poured; enjoyed over the course of an hour. The 1995 Les Perrières pours a deep garnet with a near opaque core; medium viscosity with moderate staining of the tears. On the nose, the wine is vinous with notes of brambles, Poblano pepper, purple flowers, graphite, leather, a touch of horse blanket, some fine warm spices and gravelly minerals. On the palate, the wine is dry with medium+ tannin and medium+ acid. Confirming the notes from the nose. The finish is long, grippy and mineral laden. Delicious. I love where this wine is at today. Drink now but well stored examples will likely live well past 2035. — 14 days ago

Aromas & Flavors

Mouthfeel
Lively mousse with lovely tension and balanced acidity. Refreshing, energetic, and clean while maintaining enough texture to feel complete and satisfying through the finish.
Food Pairings
Excellent with smoked trout, oysters, sushi, fried appetizers, soft cheeses, or light seafood dishes. The pairing with fatty smoked trout submerged in garlic olive oil sounds absolutely spot on, the acidity and freshness would cut beautifully through the richness.
Verdict
A surprisingly well-balanced and highly approachable Champagne that overdelivers in freshness and drinkability. Vibrant, refreshing, and dangerously easy to enjoy glass after glass.
