Vaillons Chablis 1er Cru Chardonnay 2019

Medium lemon core . Some ripe pear , citrus, white flowers , light white peach and red apple notes also with just a touch of toastiness. Quite ripe and generous on the nose . On the palate this is also generous in style , creamy ripe pear and lightly honied apple , white peach , though there are some more chalky , seashell elements that turn up on the finish . This is quite rounded but has enough energy and acidity to balance well, alcohol is also balanced , and there is a light saline hint also on the moderate length finish . This is drinking well now and I don’t see it being particularly long lived , so best over the next 5 years or so — 8 days ago

Fevre is always a solid wine. I think the style lends itself to playing it safe and down the middle. Never over top in fruit nor mouth ripping acidity. A safe crowd pleaser — a month ago

As I have said, Charles Hendricks is my favorite new world winemaker for Malbec. This 12 is perfect with chocolate truffles.

Many would not get this blind. They would call Napa Cabernet or Napa Bordeaux blend.

It is around its precipice. Ripe, juicy, lush fruits; blackberries, black raspberries, black cherries, strawberries, blueberries, mocha powder, dark chocolate to chocolate mousse, nutmeg, cinnamon, clove, vanilla, dry top soil, moist to dry clays, tumbleweed, some light dry herbs, chard barrel shavings, dark spices, black tea, black licorice, dark cola, dry, crushed limestone/rocks, leather, dry tobacco, dark, withering flowers, liquid violets-lavender, grand, round, acidity, well; balanced, structured, tensioned with a polished/elegant finish that lasts minutes and long sets on spice & dry earthiness.

Chablis Chardonnay 2022

This is my entrance into the world of Chablis. Don't know how it took me so long, but I've also never seen Top Gun 🤷‍♂️ This wine has a supple mouthfeel despite it's bright acidity on the back of my tongue. Flavors of lemon and peach, with plenty of minerality on the finish. Thanks to my friends who gave recommendations- this is the first one from your lists that I found locally. Awesome! Enjoy! I do have a sweet spot for Chablis and more often than not, I naturally reach for a Chablis when I get homesick. It reminds me of home and past times when I used to live in Paris.

This magnum showed more advanced than expected, based on the previous one.
Nevertheless, this was rounded, rich, mineral and a only touch nutty.

Saint-Bris Sauvignon 2021

Slight yellow color with aromas of lemon, apple, and a bit of minerality. On the bud, it rich with a nice body and acidity. Green apple tartness with a medium finish.

Yes, this is in the Burgundy region not too far from Chablis. Saint-Bris is the only place you can get a Sauvignon Blanc in Burgundy.

Clear, medium ruby in color; on the nose, it's clean with pronounced intensity primary and secondary aromas of black cherries, red plums, raspberries, and dried herbs; on the palate, it's dry with high acidity, high tannins, medium alcohol, full body, and pronounced intensity primary and secondary flavors of red currants, cherries, blueberries, black currant, and clay pots with a long finish.
